The pork cheeks (pigs raised in Italy) are salted in a thin layer of salt and ground pepper and left to rest for 14 days. Next comes the seasoning phase, which lasts at least 50 days, which is considered the right amount of time to give it these characteristics during cooking. Once cold, it is cut into strips and packaged. It has a mild flavour and a slightly spicy aroma. The flavour is combined with the quality of the raw material and the typical cut. This format gives the flavour a more enveloping sensation on the palate as well as the presentation on the plate.
