Information
Made in the Alto Alentejo from raw Merina Branca sheep’s milk, this semi-hard cheese has small eyes and a slightly tangy flavour. It is traditionally coagulated with vegetable thistle rennet, a distinctive feature of Portuguese cheesemaking.
