Information
A unique cheese from Extremadura, made with raw Merino sheep’s milk and vegetable rennet. Its interior is exceptionally creamy almost liquid encased in a firm, yellow-ochre rind. The flavour is intense and slightly earthy, with a pronounced milky and vegetal aroma. Best enjoyed at room temperature: remove the top rind and serve with a spoon over sourdough bread, accompanied by a Cava.
