Also known as the Prince of Gruyères, Beaufort d’Été is produced in the French Alps between June and October, when the cows graze on mountain herbs and flowers. It is distinguished by its deeper yellow paste, firm yet melting texture and fruity aromas, with notes of butter, flowers and nuts.
