Artisanally produced in the Ribatejo region, Chiba Cinza is a raw goat’s milk cheese from small local herds, carefully crafted according to traditional methods. The name “Chiba”, an expression used by shepherds to refer to goats, pays tribute to rural roots and the origin of the milk. Pyramidal in shape with a creamy paste, this cheese is coated in edible vegetable ash, an age-old technique that protects the surface and supports the development of a rich natural flora. During ageing, a white bloom forms over the grey ash, giving it a rustic yet elegant appearance. On the palate, it initially reveals fresh, milky and vegetal notes, evolving with maturation into deeper earthy and mushroom flavours. A living cheese in constant transformation, its aromatic complexity is enhanced by the use of ash, making it a distinctive choice for lovers of artisanal cheeses with character.
