Gluten Free, Dairy Free, simple to make & super delicious!
Combine all pancake ingredients together in a blender and blend until smooth. If the mixture is too thick add a little more milk, if it’s too thin add some more oats & blend again.
Transfer mixture into an easy to pour from container & set aside.
For the caramelised bananas, slice each banana in half and then lengthwise through the middle. With the insides facing upwards, take your caster sugar and spoon it over the top of the bananas until covered.
Heat up a 1tbsp of butter in a small pan, until bubbling. Then add your bananas, sugar side down into the pan. Don’t move them, let them caramelise in the pan for 2-4 minutes. Be careful not to let them burn, take the heat down if needed. Once caramelised, take the bananas out the pan and set aside.
In a new pan, heat up 1tbsp butter again until sizzling. Pour or spoon a ladel of your mixture into the hot pan. Cook for 2-3 minutes until you see bubbling on the surface, then flip. Cook the other side until golden brown. Repeat process with the rest of the mixture.
To serve, stack your pancakes & add a big spoonful of Greek yoghurt on the top. Place your caramelised bananas over the yoghurt & drizzle generously with maple syrup.
