Empty CartOat Pancakes

Ingredients
- 2 eggs
- 70g oat flour
- 80ml plant-based ‘milk’
- Lemon or Orange zest (optional)
Method
Whisk the eggs with the plant-based ‘milk’. Add the oat flour and mix well together. Heat a non-stick frying pan and drizzle in a little coconut oil. Ladle in two tablespoons of pancake bater and cook for more or less two minutes each side. Repeat the process until you’ve finished the batter.
Serve with your favourite topping and fresh fruit.
