Ingredients
- 250g Mascarpone cheese
- 200ml whipping cream (chilled)
- 6 tbsp sugar or to taste
- 33cl Stout beer
- Sponge fingers
- Chocolate or cocoa powder to sprinkle
Method
Mix the mascarpone with the sugar in a bowl until the sugar dissolves. Set aside.
Whip the cream in another bowl until it forms peaks. Gently fold the mascarpone/sugar mixture into the whipped cream until smooth.
Pour the beer into a shallow bowl. Dip and soak the sponge fingers in the beer. Don’t overdo it, as the fingers may break apart.
Layer the cream, soaked sponge fingers and chocolate/cocoa into small glasses or a dish.
Chill in the fridge for at least 12 hours prior to serving.
Tips:
If you don’t have any cream, or fancy a low-fat version, you can replace the cream with egg whites and icing sugar whipped to form peaks. In this case don’t add any sugar to the mascarpone.
