Ingredients
- 250g cherries (stoned)
- 200ml cream
- 3 egg yolks
- 150g sugar
Method
Blend the cherries with a hand blender until pureed (some whole fruit pieces are ok).Whip the cream until firm. Set aside.
Beat the egg yolks with the sugar until you have a smooth paste. Add the cherries and whisk.
Add the cream and gently fold together, maintaining the stiffness of the cream.Place in a container and freeze.
