Chocolate Mousse with Olive oil

Ingredients

  • 200g Cooking chocolate
  • 5 Tbsp olive oil
  • 4 Organic eggs
  • 80g Light brown sugar
  • 1 Teaspoon table salt
  • Walnuts, to taste
  • Fresh mint, to taste

Method

Melt the chocolate in a bain-marie, adding the olive oil and mixing. Leave to cool.
Separate the eggs.
Beat the yolks with the sugar and add the melted chocolate mixture. Put to one side. 
Beat the egg whites into stiff peaks, adding the salt and fold into the chocolate mixture.
Chill for at least 2 hours. 
Serve with crumbled walnuts and decorate with a mint leaf.

Tip:
Use 70% cocoa chocolate.
