Easter Biscuits

Method

Cream the butter and sugar in a bowl until the sugar has fully dissolved. Add the egg and spices and whisk together. Sift in the flour gradually into the mixture. Finish off by hand, until you have a firm dough. Leave to rest for 30 min.

Preheat the oven to 180ºC. Meanwhile, roll out the dough to a thickness of 2-3mm on a flour-dusted surface. Cut out biscuits in fun Easter shapes, such as eggs, bunnies or chicks, etc. Arrange on a baking tray lined with paper. Bake in the oven for 10 min. or until they are golden. Remove and leave to cool.

For the decorative icing, mix together the icing sugar and lemon juice until you have a smooth paste. Add the colouring. Use an icing bag to decorate the biscuits and let your imagination run wild!
