Empty CartTiramisu Chia Pudding

Prepare this recipe the night before or at least a few hours before you plan to serve it.
Combine the chia seeds, milk, espresso, cinnamon, agave, half of the yoghurt and the vanilla extract in a bowl and mix well. You can add protein powder at this stage (chocolate or vanilla is recommended), but it can also be made without it. If you do add it, use a bit more milk to adjust the consistency.
Leave the mixture to sit for about 5 minutes and, as it starts to thicken, stir it again to remove any lumps. Then cover and place it in the fridge for a few hours (or overnight).
In another bowl, mix the remaining Greek yoghurt with a little vanilla extract and agave to taste.
Slice the banana and grate the dark chocolate, if you wish to use it.
Remove the chia pudding from the fridge; you can always add more milk if it is too thick.
Finally, layer it into glasses or small bowls with the yoghurt mixture and banana slices. Finish with cocoa powder or grated dark chocolate and serve.
