Rhubarb Lemonade

Ingredients

  • 2 Cups of rhubarb, cleaned and chopped
  • 1 Cup of sugar (more if desired)
  • Zest and juice of 3 lemons
  • 3 Cups of water

Method

In a medium saucepan, combine the ingredients with 1 cup of water. Bring to a boil, and simmer until the rhubarb is soft (20-30 min). Remove from the heat and leave to cool completely. Strain the mixture through a fine mesh sieve, pressing to remove as much juice from the rhubarb pulp as possible. Add 2 or more cups of water to the rhubarb syrup, to taste. Chill the lemonade for at least 1 hour and serve over ice.

Tip: If you want sweeter lemonade you can add sugar or another sweetener to taste. You can save the syrup to prepare some cocktails.
