Turkish Coffee

Ingredients

  • 2 teaspoons of extra-fine ground coffee (adjust to taste)
  • 2 cups of water
  • Spices (optional)
  • Sugar (optional)
  • 1 Cezve pot, or small pan or kettle

Method

In the pot mix the coffee, water, spices, and, if you want a sweetened coffee, sugar. Place the pot over a low heat and slowly bring to the boil until foam forms. Remove from the heat and with a spoon transfer the foam into the cup.  Return to the heat and allow to heat briefly, before removing and serving.

Before drinking let stand for at least a minute to allow the grounds to settle.

 

Tip:

Depending on the type of coffee, the quality and the strength desired, you can use more or less coffee, to taste. In the event you don’t know how sweet you want your coffee, you can sweeten it at the end, in the cup, before the grounds settle.

While the coffee is heating, keep on an eye on the pan to avoid boiling over.
