Empty CartPan-fried Skrei Cod with Samphire

Ingredients
- 800g fresh Skrei cod fillet
- 2 garlic cloves, chopped
- Salt, to taste
- Olive oil, to taste
- Butter, to taste
- Black pepper, to taste (optional)
- Samphire, to taste
Method
Cut the cod into portions, season with a pinch of salt and leave to rest for about 5-10 min. Wash off the salt and dry with a paper towel.
Heat the olive oil in a hot frying pan. Add the garlic and fry the fish skin-side down for about 4 min. Turn the fish over, add the butter and remove the pan from the heat. Let the fish rest for a further 4 min in the heat of the pan to finish cooking.
For the garnish, cook the samphire in boiling water, or steam, for 3-5 min, until soft. Do not season with salt, as samphire is naturally salty. For extra flavour season with olive oil.
Serve the cod with mashed potatoes and the samphire garnish.
