Salmon Carpaccio

Ingredients

Method

1. Coriander, lime and ginger oil

Blend together:
• coriander
• olive oil
• lime juice
• ginger
• pinch of salt

Blend until smooth and vibrant green.

2. Prepare the salmon

Using a very sharp knife, slice the salmon into very thin pieces.

Arrange the slices on a plate.

3. Prepare the garnishes

Peel the blood orange and cut the segments.

Slice the jalapeño into very thin rounds.

4. Assembly

Season the salmon lightly with sea salt flakes and freshly ground black pepper.

Drizzle with drops of the coriander, lime and ginger oil.

Finish with:
• blood orange pieces
• jalapeño slices
• fresh sprouts
• small spoonfuls of roe

Add a few extra drops of the green oil and serve immediately.
