Traditional Boiled Codfish

Method

Cook the codfish in a pan of boiling water for about 10 mins. Heat plenty of water (add salt) in another pan and boil the potatoes. When they are half cooked (about 10 mins) add the turnip greens. From time to time, check how cooked the potatoes are with a fork. When cooked, drain all the ingredients, plate up and serve with drizzled extra virgin oil and vinegar to taste. Sprinkle with chopped garlic and parsley (optional).

Tip: You can add boiled eggs, other cooked vegetables such as carrots and broccoli, or legumes, such as chickpeas. To give the codfish a more delicate flavour, add bay leaves and garlic to the cooking water.
