Ingredients
- 250g Tomato
- 800g Cubed chicken breast
- 2 Tbsp oil
- 2 Bay leaves
- 1/2 Tsp curcuma
- 1/2 Tsp cumin seeds
- 1/2 Ginger paste
- 1/2 Coriander seeds
- 2 Garlic cloves
- 4 Tbsp Patak’s korma curry paste
- 2 Tbsp cashew nuts
- 2 Tbsp fresh coriander leaves
- 1 Tender spring onion
- Salt to taste
Method
Heat the oil and fry the bay leaves and coriander seeds, adding the roughly chopped onion. Leave to cook. Add the tomatoes and cook for 2 to 3 more minutes. Add the curcuma, the cumin, the ginger and garlic, mixing well. Add the curry paste and cook for another 5 minutes. Add the chicken and cook with the pan covered for 6 to 8 more minutes, adding the cashew nuts and checking the seasoning.Plate up and garnish with the coriander and spring onion.
