Cashew chicken

  • 800g Cubed chicken breast
  • 2 Tbsp oil
  • 2 Bay leaves
  • 1/2 Tsp curcuma
  • 1/2 Tsp cumin seeds
  • 1/2 Ginger paste
  • 1/2 Coriander seeds
  • 2 Garlic cloves
  • 4 Tbsp Patak’s korma curry paste
  • 2 Tbsp cashew nuts
  • 2 Tbsp fresh coriander leaves
  • 1 Tender spring onion
  • Salt to taste

Method

Heat the oil and fry the bay leaves and coriander seeds, adding the roughly chopped onion. Leave to cook. Add the tomatoes and cook for 2 to 3 more minutes. Add the curcuma, the cumin, the ginger and garlic, mixing well. Add the curry paste and cook for another 5 minutes. Add the chicken and cook with the pan covered for 6 to 8 more minutes, adding the cashew nuts and checking the seasoning.

Plate up and garnish with the coriander and spring onion.
