Grilled Lamb Chops w/ butter

Ingredients
- 5 organic lamb chops
- 3 garlic cloves, chopped
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh thyme to taste
Method
Season both sides of the chops with salt and pepper. Meanwhile, heat a frying pan over a medium-high heat. Place the chops upright and fat-down in the pan. Cook until they brown and the fat begins to melt (about 5 min.). Lay the chops down and cook on both sides for 3-4 min., until browned. Reduce the heat to medium-low and add the butter, the garlic and the thyme. Shake the pan to spread out the butter and evenly sauté the garlic. Use a spoon to baste the meat with the butter repeatedly, for about a minute. Take off the heat, arrange the chops on a platter and pour over the butter sauce.
Tips: You can replace butter with ghee if you have a restricted diet.
