Oven roasted ribs with barbecue sauce

Method

Blitz all the ingredients, except the ribs, in a food processor, until you achieve a creamy marinade.

Place the ribs drizzled with the marinade in an airtight container. Place in the refrigerator to marinate for at least two hours, but preferably overnight.

Preheat the oven to 150°C and place the marinated ribs in a deep roasting tray and cover with aluminium foil. Roast for two hours until the meat is tender.

Remove the foil and roast for another half an hour until the sauce starts to caramelise.
