Empty CartPeas and eggs

Ingredients
- 500g Peas
- 4 Eggs
- 1 Meat chouriço
- 1 Onion, chopped
- 2 Garlic cloves, chopped
- 100ml Tomato pulp
- Olive oil
- Salt and pepper
- Coriander or parsley to taste
- Hot water
- Bay leaves
Method
In a pan with the olive oil, add the bay leaf, the sliced chouriço, the onion and the garlic. Simmer on a low heat until the onion is soft. Add the tomato pulp, cook for 3 minutes and stir.
Add the peas and the hot water until they are covered. Season with salt and pepper to taste and. simmer until the peas are cooked.
Make four hollows in the middle of the peas, break open an egg in each one, cover and cook until the eggs are poached.
Remove from the heat, sprinkle with chopped coriander or parsley and serve immediately.
