Place the bresaola (cut into pieces) on a plate, add the peach slices and top with mozzarella. 
In a bowl, mix the olive oil, lemon juice, honey, salt and parsley to make the sauce. 
Drizzle generously over the salad and finish with fresh basil leaves.
