Mayonnaise

Ingredients

  • 1 egg yolk
  • 250ml neutral flavoured vegetable oil (healthy options: avocado oil, low-acidity olive oil)
  • 1 tablespoon lemon juice (approx. juice of half a lemon) or vinegar
  • Salt to taste

Method

Whisk together the egg yolk and lemon juice in a bowl. When smooth, and while still whisking, very slowly drizzle in the oil, until you have a thick, firm cream. Season with salt, or other spices to your taste (optional).

 

Tip: Whether you use a normal whisk or an electric one, a hand blender or a food processor, the important thing is to whisk vigorously when slowly adding the oil.

Always use an oil with a neutral flavour, to ensure the mayonnaise flavour stands out.

Have your ingredients at room temperature before preparing.
