Apricot and coconut energy balls

Method

Zap all the ingredients in a food processer until you have a malleable paste.

Remove a tablespoon of the paste, roll in your hands to form a ball. Roll the ball over a plate of desiccated coconut, to coat. Repeat the process.Chill for at least 2 hours to make firmer.

Tip: You can use almonds or macadamia nuts instead of cashew nuts. If the apricots are very dry, you can soak them for a few minutes in hot water and drain.
