- Rustic bread
- Levoni Capocollo
- Courgette
- Parsley
- Garlic
- Extra virgin olive oil
- Salt and pepper to taste
Method
Cut the courgette lengthways into thin slices. In a hot frying pan, grill the courgette slices, and season them with olive oil, salt, pepper, parsley and chopped garlic. If necessary, use a spoon to help keep the seasoning even.Slice the bread, and fill it with the courgette and a layer of thin slices of Levoni Capocollo.
Pairing: Pairs perfectly with more fruity and delicate rosé wines. Excellent with a very chilled, yet bitter beer, to create a contrast with the delicate flavour of the courgette and the slightly smoky taste of the Capocollo. Or serve with a simple, refreshing orange juice.
