Method

Cut the vegetables into pieces and cook them in a pan of boiling water seasoned with salt.
When they are soft, remove from the heat and blitz everything with a hand blender until you have a creamy consistency. 

Portion out into soup plates or bowls, drizzle with a little olive oil and add croutons.
