Ingredients
- 2 aubergines
- Extra virgin olive oil to taste (approx. 4 tbsp)
- 1-2 cloves of garlic
- 2-4 tbsp tahini
- Juice of 1 lemon
- Salt and pepper to taste
Method
Roast or grill the whole aubergines until shrivelled and soft. Let them cool down for a few minutes to remove any excess liquid. Slice the aubergines in half and scoop out the soft flesh inside with a spoon. Zap the aubergine flesh with the other ingredients in a food processer until you have a smooth and creamy paste. Taste and season to taste.
