Begin by preheating the oven to 180 °C. Meanwhile, roll out the puff pastry onto a baking tray lined with baking parchment and gently fold the edges to create a slight border around the sides. Prick the centre of the pastry with a fork to prevent it from puffing up excessively during baking, then brush the surface with beaten egg.
Place in the oven for about 15 to 20 minutes, until the pastry is golden and crisp. Remove from the oven and allow it to cool slightly before proceeding. Spread a layer of goat’s cheese cream over the still-warm base.
Slice the tomatoes into thin rounds and arrange them evenly over the cheese. Season with salt, pepper and a drizzle of olive oil. If desired, add a little finely chopped garlic to enhance the flavour. Finish with fresh herbs to taste and serve warm or at room temperature.
