Tuna and Anchovy Pâté

Ingredients
- 240g Tinned tuna (in olive oil)
- 3 Anchovies
- 1 Chopped red onion
- 70g Chopped pickles
- 1 Tbsp capers
- 2 Tbsp ketchup
- 1 Bread
- 2 Hard-boiled eggs
- Ingredients for mayonnaise:
- 2 Eggs
- 250ml Olive oil
- Juice of ½ lemon
- 1 Clove garlic
- 1 Tbsp mustard
- 1 Plain Greek yoghurt
- Salt & pepper
- Chives
Method
Start by making the toast. Cut the loaf into slices. Place the slices on a baking tray lined with baking paper and toast in the oven for 10 minutes at 180ºC.
For the mayonnaise, pour into a tall glass, two eggs, a clove of garlic, a tablespoon of mustard, the juice of half a lemon, a pinch of salt and chilli to taste. Using a hand blender on, start emulsifying and pour in 250ml of olive oil, little by little. Finally, add some plain Greek yoghurt and mix everything together. Season with salt and pepper and set aside.
Mash two hard-boiled eggs. Add 240g of drained and mashed tuna, a red onion, 70g pickles and a tablespoon of capers. Shred three anchovies with a fork, add two tablespoons of ketchup and fold into the mayonnaise. Finish with chopped chives.
Serve the tuna and anchovy pâté with the toast.
