Ingredients
- Approx. 200g plain cashew nuts
- Sweetener (date, agave or maple syrup, etc.) to taste
- 80g coconut oil (melted)
- Juice of 1 lemon (approx. 50ml)
- 120ml coconut milk
- Vanilla to taste
Method
Soak the cashews overnight in cold water, or for at least 30 minutes in hot water. Drain the water and blend the cashews with the remaining ingredients until you have a thick, creamy, smooth paste. Use this cream in cheesecakes or other sweet recipes.
