Pancakes with strawberries, basil and chocolate

Ingredients

Method

Separate the yolks from the whites of 3 eggs, and place them in 2 different bowls.
Beat the yolks with the sugar, the yoghurt, the milk, the vanilla extract and a pinch of salt.
Add the sifted flour and the baking powder. Stir well until the mixture is smooth.
Beat the egg whites until stiff and fold into the mixture.

Cook the pancakes in a non-stick frying pan until they are golden brown on one side.
Before flipping, place a dollop of chocolate hazelnut cream in the centre of the pancake and cover with a little more batter.
Flip the pancakes and leave to cook.
Serve the pancakes with sliced strawberries, chopped basil leaves and icing sugar.
