Empty CartPumpkin Jam

Ingredients
- 1Kg Pumpkin, deseeded and peeled
- 800g Sugar
- 2 Star anise
- 1 Cinnamon stick
- 1 Lemon (rind)
Method
Place the peeled and diced pumpkin in a large pan.
Add the sugar, cinnamon stick, lemon zest and star anise.
Cook over low heat until the sugar melts. When the sugar has melted, increase the heat and stir until it reaches the setting point.
Remove the cinnamon stick, lemon zest and star anise.
Blitz with a hand blender and store in jars.
