Ingredients
- 90g softened unsalted butter
- 100g Sugar
- 300g plain flour
- 1 eggs
- ½ teaspoon baking powder
- Pinch of salt
- Vanilla extract to taste
Method
Sift the flour, baking powder and salt into a bowl and set aside.
In a large bowl, cream the butter with the sugar until smooth and the sugar dissolves. Add the egg and vanilla and mix.
Add the flour and mix gently until a dough forms. Wrap the dough in cling film and leave to rest for 1 hour.
Preheat the oven to 170ºC. Meanwhile roll out the dough on a surface dusted with flour. Roll out the dough until it is about 0.5 cm thick and cut out the biscuits in the desired shape. Place on a baking tray lined with baking paper. Bake for about 12 minutes, or until golden brown.
