Bacalhau à brás with sweet potato

Method

1. Start by soaking the cod. Once properly soaked, you should flake and/or shred it. Remove the skin and bones.

2. Chop the parsley

3. Finely chop the onion and garlic and sauté in a large frying pan in a splash of olive oil.

4. Once the onion and garlic are golden, add the cod flakes, the chopped parsley and season with salt and pepper. Mix well and leave to cook.

5. Separate the whites from the yolks of 6 eggs.

6. Add the previously fried potato sticks, mix and turn off the heat. Add only the egg yolks, which will cook in the residual heat.

7. Serve with the help of a cooking ring and place just one egg yolk on top. Finish with chopped parsley and a sprinkling of pepper.
