Ingredients
- 1 Handful basil leaves
- Mixed lettuce
- 1 Tablespoon honey
- 1 Garlic clove finely chopped
- 1 Tablespoon balsamic vinegar
- 1 Tablespoon lemon juice
- 5 Tablespoons olive oil
- Salt & pepper
- 100g Roquefort cheese
- 3 Tablespoons crème fraiche
- 2 Tablespoons toasted pine nuts
- 400g Sliced roast beef
Method
Wash the lettuce and toss together with the basil.
Dressing:
Mix together the honey, garlic, vinegar, 1 tablespoon lemon juice, 4 tablespoons olive oil, salt and pepper.
Cheese sauce:
Crumble the cheese, adding 1 tablespoon of olive oil, the juice of ½ a lemon and crème fraiche.
Stir well.
Divide the lettuce-basil mix between four plates.
Drizzle with the dressing.
Share the roast beef between each plate and drizzle with the cheese sauce.
Sprinkle each dish with pine nuts.
