Chop the fruit and vegetables: finely slice the radishes; finely slice the cucumber lengthways; slice the onions; and quarter the apples and slice the quarters.Cube the fresh cheese. Use feta, fresh goat’s cheese or another of your choice.
When plating up, arrange the vegetables, fruit and cheese around the plate, rolling up the cucumber slices to simulate a flower. Decorate with flowers and microgreens. Drizzle with olive oil (optional) and season.
