Cream of Almond Soup

Sauté the sliced onions, sliced leek and the cloves of garlic in a pan with the olive oil. Season with white pepper and leave to brown.

Add the hulled almonds, the diced potatoes, the almond drink and the 200ml water.

Season with salt and simmer for 20 minutes after bringing to the boil. 

After this time, blitz the soup and adjust the seasoning.

Serve and finish with chopped chives, toasted slivered almonds and a drizzle of olive oil.
