Method

Whip the cream with the sugar in a bowl until firm and whipped, and chill.

Blend the berries. Alternatively, in the case of strawberries, strain to remove the seeds.

Place the gelatine sheets in water. Drain and microwave for 60 seconds to melt.

Add the melted gelatine to the fruit puree and mix well. Gently fold in the whipped cream until you have smooth cream.

Put into dessert bowls and chill for a few hours.

Serve decorated with berries, edible flowers or another decoration of your choice.

 

Tip: Depending on the type of berries you’re using, you may need to adjust the sugar. For tart berries, sweeten to your taste.
