Chestnut Crème Brûlée

Cook the chestnuts on a low heat, ensuring, when cooked, a little liquid remains to help when mashing them. 
Put the milk on to boil with the lemon rind. 
Mix the egg yolks with the sugar, blending well until it turns white and then add the cornflour. Pour the boiling milk into this mixture, stirring well, before adding the mashed chestnuts. Return to the heat, stirring well, until it begins to boil and thicken slightly. 
Pour into individual dishes and leave to cool. 

When cool, sprinkle with light brown sugar and burn with a blowtorch or use a traditional burning iron.
