Flourless Chocolate Cake

Ingredients

  • 170g Chocolate chips or cooking chocolate
  • ½ Cup salted butter
  • 3/4 Cup sugar
  • ½ Cup cocoa powder
  • 3 Large eggs
  • 1 Teaspoon vanilla extract

Method

Preheat the oven to 180º C.  Grease a round cake tin (20 cm approx.) with butter, lining the base with some baking paper. Place the butter and chocolate in a pan over a gentle heat and mix until melted to a smooth and creamy texture. Place this mixture into a bowl and add the remaining ingredients. Whisk until all mixed together.
Pour the batter into the prepared tin and bake for about 25 min, or stab with a cocktail stick - when it comes out almost clean the cake is cooked. Remove from the oven and leave to cool for 5 min. Pass a knife around the edge of the cake prior to removing from the tin.

Tip: To decorate, sprinkle with icing sugar or cocoa powder.
