Gluten-free Almond Biscuits

  • 3 Cups of almond flour or ground almonds (approx. 200g)
  • 1 Cup of sugar
  • 2 Egg whites
  • Vanilla extract to taste (optional)


Place the flour, sugar andvanilla in a bowl and mix. Add the lightly beaten egg whites, and mix until youget a firm dough. Use your hands to roll small balls of about 3 to 4 cm indiameter. Place them on a baking tray with baking paper and flatten themslightly. Bake in a preheated oven at 180ºC and cook for 15 min., or until thebiscuits are golden brown.

Tip: To make the almond flour at home, zap some peeled almonds in a foodprocessor until you reach flour consistency.
To decorate the biscuits, roll the dough balls through laminated almonds beforeplacing them on the baking tray, or place an almond in the centre when youflatten the balls.
