Alentejo Style Pork

  • 1kg potatoes
  • 700g pork
  • 250g clams
  • 60g pickles
  • 4 cloves garlic
  • 200ml white wine
  • 50ml olive oil
  • 3 tablespoons red pepper paste
  • Coriander to taste
  • Olives to taste


Cut the meat into cubes and season with the chopped garlic cloves, red pepper paste, white wine, salt, and pepper. Leave to marinate for 1 hour.

Heat the olive oil in a pan, add the meat and sauté. Drizzle the marinade over it and let it cook until the meat is tender. Peel and wash the potatoes, cut them into cubes, and fry. When cooked, drain off the oil and set them aside.

When the meat is tender, check the seasoning and add the clams.Mix the clams and the meat and cook over low heat until the clams open.

Remove from the heat, add the potatoes and the chopped coriander. Arrange on a platter and garnish with the olives and pickles.
