Ingredients
- 1 Leg of lamb
- 4 Garlic cloves
- 3 Onions
- 2 Tablespoons paprika
- 3 Bay leaves
- 300 ml white wine
- 2 Tablespoons olive oil
- 1 Bunch parsley
- Mint leaves to taste
- Salt to taste
- 3 Cloves
- Chilli powder and peppercorns to taste
- 1 Potatoes
Method
Start by thinly slicing 1 of the onions and 2 of the garlic cloves.
Season the meat with these onion and garlic slices.
Add 1 tablespoon of paprika, salt, peppercorns, 2 torn-up bay leaves, parsley, mint and cloves.
Pour over the white wine and leave to marinate for 2 hours. After this time, drizzle with half the olive oil. Place everything in the oven on a baking tray and bake at 180ºC for about an hour and a half, basting occasionally with the juices.
While the leg is roasting, prep the potatoes: wash, peel and slice the potatoes.
Cut the remaining onions into thin halves and roughly chop the garlic. Place the potatoes on a baking tray, scatter over the onions, garlic, the remaining paprika, bay leaf, pepper and salt, then drizzle over the remaining olive oil.
Mix everything together and bake in the oven at 200ºC for 45 minutes.
Once the potatoes are roasted, you can add them to the leg of lamb to add more flavour. Sprinkle with chopped parsley and serve.
