Empty CartBresaola Carpaccio

Ingredients
- 240g Bresaola salted beef
- 80g Parmigiano-Reggiano cheese
- 200g Mixed salad
- 2 Egg yolks
- Juice of half a lemon
- 1 Tablespoon Dijon mustard
- Sunflower oil
- Pepper and salt
- Worcestershire sauce to taste
- 2 Tablespoons milk
Method
Mayonnaise:
Place the egg yolks, lemon juice and mustard in a blender, adding the oil slowly when the blender is in full motion, until you have a thick mayonnaise.
Sauce:
Take the prepared mayonnaise and add pepper, salt and Worcestershire sauce to taste.
If too thick, add a little milk and stir.
Arrange the washed mixed salad on a plate, top with the beef slices and drizzle with the mayonnaise sauce.
Grate over some Parmigiano-Reggiano.
