Chimichurri

Ingredients

  • 30g Chopped fresh parsley
  • 2 Tablespoons chopped fresh oregano
  • 2-4 Cloves garlic, chopped
  • 1 Small chilli pepper, seeds removed, chopped (change according to required heat)
  • 240ml Olive oil or sunflower oil
  • 2 Tablespoons red wine vinegar
  • q.b. Salt and black pepper

Method

Mix together all the ingredients in a bowl and leave to rest for at least 10 minutes (ideally 2 hours), to give the ingredients time enough to release their flavours into the oil.
Store in the fridge between 24-48h, eat before 48h.

Tip: The solid ingredients should be very finely chopped, or you can mash them with a mortar and pestle. 
Try adding chopped onions and bell peppers.
