Ingredients
- 8 Prawns
- 120g Nero di sepia spaghetti
- 3 Tbsp olive oil
- 1/2 Chopped shallot
- 2 Chopped garlic cloves
- 2 Monkfish fillets, diced
- 1 Chilli pepper, chopped and deseeded
- 1cm Finely chopped ginger
- 150g Pickled mussels
- 5g Chopped parsley
- Salt and pepper
- Lemon juice
- Boiling water
Method
1. Start by marinating the 8 peeled prawns in lemon juice and salt and set aside.
2. Cook 120g of nero di sepia spaghetti in a pan of boiling salted water. Drain and save some of the water.
3. Sauté the shallot and the garlic in a frying pan with 3 tbsp of olive oil.
4. Add the marinated prawns, saving the marinade juice, and diced monkfish fillets. Season with pepper.
5. Add the pickled mussels and the saved marinade juice. Season to taste.
6. Finish with the chopped chilli pepper, chopped ginger and chopped parsley.
7. If you need to increase the sauce, you can add a little of the saved spaghetti cooking water.
8. Serve the drained pasta, topping with the prawn and monkfish mixture and drizzle with the sauce.
